I posted this in a couple of places, this will be the last. We found the inability to edit list columns was caused by a change in the user rights for virtual servers. Specifically, “Manage List Permissions” and “Manage Lists” were mysteriously unchecked after applying SP3. So, if needed… Go to Windows...
